Date Night! ~ Gluten-free Peppermint Chocolate Date Cupcakes

No, no… I’m not talking about a romantic night with your significant other… I’m talking about the edible kind of date!

Why do we love dates?  There are MANY reason to include dates in your diet:

This recipe is simple and fast, as it utilizes a premix from Pamela’s® gluten-free pantry:  Chocolate Cake and Dark Chocolate Frosting mixes.  Don’t let the ‘gluten-free’ and ‘dairy-free’ aspect of these mixes scare you.  Hands-down, Pamela’s® chocolate cake mix will deliver the most delicious, moist, rich cakes/cupcakes you will ever taste, especially from a premix.  Most homemade cakes can’t even hold a candle to this masterpiece.  So, thank you Pamela for making gluten/dairy/wheat-free dessert delicious for everyone!

So, let’s get date night started!


~ Gluten-free, Wheat-free & Dairy-free*! ~

What you’ll need:

Pamela’s® Chocolate Cake mix

Pamela’s® Dark Chocolate Frosting mix

1 ½ cups dried dates

2 Tbsp vanilla almond milk

½ cup canola oil

2 large eggs

8 Tbsp butter (*or butter substitute if you’re avoiding dairy)

Peppermint essential oil


Soak the dates in hot water for 10-15 minutes.  Once the dates soften, drain the water and dump them into a food processor with the almond milk.  Blend until the consistency is similar to peanut butter, as shown below:

Prepare Pamela’s Chocolate Cake mix as indicated on the packaging (using the oil and eggs).  Mix the pureéd dates and 4-5 drops of peppermint essential oil into your prepared cake batter.

Fill cupcake liners approximately ¾ full with the chocolate-date-peppermint cake mix.  Bake at 350° F for 20-24 minutes.

Remove cupcakes from the oven and let them cool to room temperature.  Meanwhile, prepare Pamela’s® Dark Chocolate Frosting mix as per package instructions, adding 4 drops of peppermint to spice things up.

Once the cupcakes are cool, apply a generous serving of the peppermint chocolate frosting to each delicious cake.  Top them off with a decorative date.

P.S.  These are a big hit with children, but you may want to remove the cockroach-looking date décor…
